Chillas are one of our favourite quick breakfasts at home. They are simple to prepare, wholesome and very satisfying. They can be made using different flours like nachni (ragi), jowar, wheat flour, gram flour or even green moong dal flour.
At home we often enjoy them just as they are, but my younger son especially loves them with a little ketchup on the side.
Ingredients
1½ cups green moong dal flour (readily available online)
4–5 green chillies, finely chopped
½ cup finely chopped coriander leaves
1 tsp coriander powder
½ tsp cumin powder
¼ tsp chilli powder (optional)
Salt to taste
Water as required
Oil or clarified butter (ghee) for cooking
Method
In a bowl, combine the green moong dal flour, chopped green chillies, coriander leaves, coriander powder, cumin powder, chilli powder (if using) and salt.
Add water gradually and mix to make a smooth batter. The consistency should be neither too thick nor too thin, similar to a crepe batter.
Heat a pan and lightly brush it with oil or clarified butter.
Pour a ladle of the batter onto the pan and spread it evenly.
Cook on a medium flame.
When almost done, brush a little oil or ghee on top and flip to cook the other side until lightly crisp and cooked through.
Serve hot with chutney, ketchup, or simply enjoy them as they are.
