Masala fried Brinjal to be served with Dal And Rice
The brinjal is sliced and marinated with spices , coated well with Gram flour batter then coated again with some panko bread crumbs.
Fried Brinjals
Ingredients
1 big size Eggplant/ brinjal
For Marination
1 tbsp East Indian Bottle Masala or 2 tsp chilli powder
1/2 tsp pepper powder
1/4 tsp turmeric powder
Salt to taste
1/2 tsp garam masala powder
1 tbsp ginger garlic paste
Mix well add very little amount of water to make a paste
For coating
Panko bread crumbs
For the Batter
3 tbsp Gram flour
Water as required
1/2 tsp Chilli powder
Salt to taste
Make a thick batter mixing all the above mentioned ingredients.( A nice thick batter)
Method
Coat the slices well with the prepared batter ,then coat with panko bread crumbs.
Shallow fry on medium flame.
