Fried Chicken with Button Mushrooms

A delicious Indo-Chinese style chicken dish with tender button mushrooms coated in a spicy, tangy sauce. Perfect as a starter or served with fried rice.


Ingredients

For the Chicken

1.5 kg chicken pieces (suitable for frying)

Clean, wash and pat dry

For the Marinade

1 tbsp barbecue sauce

2 tbsp Sriracha sauce

2 tbsp ginger-garlic paste

1 tbsp mulberry molasses or brown sugar


Method: Mix all the marinade ingredients well. Coat the chicken pieces evenly and marinate for 1 hour.


For the Sauce

1 tbsp soy sauce

1 tbsp barbecue sauce

1–2 tbsp Sriracha sauce (adjust to taste)

1 tbsp vinegar

Mix all the ingredients together and keep aside.


Other Ingredients

4 dried Bedgi or Kashmiri red chillies, broken into halves

400 g button mushrooms, cleaned, patted dry and sliced

Greens of 1 bunch spring onions, finely chopped


Method

Heat a little oil in a pan and shallow fry the marinated chicken until cooked and done. Remove and keep aside.

In the same pan, add the sliced button mushrooms and sauté until tender and done . Remove and keep aside.

Add the dried Bedgi/Kashmiri chillies to the pan and stir-fry for a few seconds until aromatic.

Pour in the prepared sauce and bring it to a gentle boil.

Reduce the flame and add the fried chicken and sautéed mushrooms. Toss well until everything is evenly coated with the sauce.

Sprinkle the chopped spring onion greens over the chicken and give it a final toss.

Serving Suggestion

Serve hot with fried rice, or enjoy it as a starter or appetizer.
