Fried Chicken Wings With Homemade Tandoori Masala

Sunday Lunch special Chicken Wings in homemade tandoori masala, Pulao and Raita


For the Chicken Wings

1 kilo 400 gms Chicken Wings

For the marination

1 tbsp and 1 tsp chilli powder

1 tsp coriander powder

1/2 tsp turmeric powder

1 tsp garam masala powder

1 tsp pepper powder

1/2 tsp cumin powder

1 tbsp ginger garlic paste

1/4 tsp nutmeg powder

1 tbsp honey

400 gms curd


powder the fennel seeds, Fenugreek seeds and dry Kasuri Methi together , mentioned below are the measurements.

1 tsp fennel seeds

1 tbsp kasuri methi

1/4 tsp Fenugreek seeds


Method


mix all of the above ingredients together along with the 400 GM's curd and add salt to taste accordingly.


Marinate the chicken wings with this ,keep overnight in the fridge or just marinate for few hours.

Shallow fry.


For the pulao


Ingredients

2 cups basmati rice

2 onions sliced

2 tomatoes sliced

1/2 cup finely chopped coriander leaves

1 or 2 stock cube depending on the size of the cube

1 tbsp kasuri methi

1 tbsp curd

1 tsp ginger garlic paste

spice powders

1/2 tsp chilli powder

1/4 tsp cumin powder

1/2 tsp pepper powder

1/2 tsp coriander powder

1/2 tsp garam masala powder


Method

Add 3 tbsp ghee , fry the onions till lightly browned, mix in the tomatoes and stir fry cooking till soft , add 1 tsp ginger garlic paste

, Kasuri Methi, curd, stock cube, and the spice powders , stir fry adding 1/2 cup water and cooking for a minute. Add the rice and stir fry for a minute. Add the finely chopped coriander leaves and hot water 1/2 inch above the rice.

Let it come to a boil .Lower the flame and cook till done.


Serve with Raita ( for the Raita curd , onions , Toma, green chilli, Red chilli powder, pepper powder, salt, finely chopped coriander leaves, and little bit of sugar)

GARAM MASALA POWDER


Ingredients


100 grams cinnamon

40 gms cloves

40 grams cardamom

40 grams peppercorn

20 gram star anise

20 grams javitri

10 grams bayleaf


METHOD

Dry roast all the above ingredients. Allow to cool. Dry grind to fine powder.

Sift the powder.

Fill in airtight bottle


Total weight around 230 gms of garam masala .
