Egg Fried Rice

Egg Fried Rice with Indrayani Unpolished Rice


A wholesome and flavourful fried rice made with nutritious Indrayani unpolished rice, spring onions, ginger, garlic, green chillies and fluffy scrambled eggs. Simple, aromatic and delicious, served with a refreshing cucumber salad and chilli oil.




Ingredients – 1


2 cups Indrayani unpolished rice


Water, as required for cooking


Tip: Preferably soak the rice for at least 5–6 hours. Wash and drain well, then add just enough water to cook the rice. Once cooked, allow it to cool completely. Refrigerate for 1–2 hours before preparing the fried rice. This helps keep the grains separate.



Ingredients – 2


100 g spring onion greens, finely chopped


60 g spring onion bulbs


25 g garlic cloves, finely chopped


15 g ginger, finely chopped


3–4 green chillies, finely chopped


Salt, to taste


Pepper powder, to taste


2 eggs


Chilli flakes, to taste


Oil, as required



Method


Prepare the Scrambled Eggs


Crack the eggs into a bowl and whisk well with a fork.


Add chilli flakes, pepper and salt to taste and mix.


Heat a little oil in a pan. Add the whisked eggs and scramble until just cooked.


Remove the scrambled eggs from the pan and set aside.


Prepare the Fried Rice


Using the same pan, add a little more oil if required.


Add the finely chopped ginger, garlic and green chillies. Sauté until fragrant and aromatic.


Add the spring onion bulbs and sauté lightly.


Add some of the chopped spring onion greens and sauté for a minute.


Season with salt and pepper to taste.


Add the cooked, cooled Indrayani rice—or any rice of your choice.


Toss and stir-fry well, allowing the rice to combine with the aromatics without breaking the grains.


Add the remaining spring onion greens along with the scrambled eggs.


Stir-fry everything together for a few minutes until well combined.


Serve hot with a refreshing cucumber salad and chilli oil or your favourite chilli sauce.


Tip: Using well-cooled rice is the secret to a delicious fried rice with beautifully separate grains.
