A wonderful East Indian Christmas sweet /cookie . This is made using a short crust pastry consisting of plain flour/maida , butter , sugar and eggs. The pastry dough is rolled out and cut into strips. The date and walnut is placed into each strip and sealed.
Ingredients
200 gms plain flour/ maida
1 egg
100 gms soft butter
60 gms sugar . powder the sugar
1/2 tsp cinnamon powder
1/4 tsp nutmeg powder
6 cloves ( powder the cloves with the sugar)
Method 1
Cream butter and sugar well . Add the egg and mix well. Now add the sifted flour little at a time .
Start to knead to a soft dough. Add a tsp of extra flour and roll to a smooth soft dough.
Method for Dates and walnuts
Deseed the dates , making a slit . Add a 1/4 piece walnut inside the date.
40 dates , 10 walnuts.
Method 2
Dust your working surface with flour. Roll out the dough to 1/4 inch thick. Cut into strips about 1inch x 2.5 inches.
Roll a date and walnut in each strip. brush the ends of the dough strip with egg wash.
seal edges well.
brush a baking tray with oil.
place these rolls on the tray. brush with egg wash.
Bake in a preheated oven at 180 degrees for 25 mins or till underside turns brown.
Dust with icing sugar (optional)
