Cottage cheese prepared with dried mix herbs and a creamy gravy. Paired this Paneer gravy with
a lovely basic tomato rice and Broccoli
Ingredients 1 500 gms Paneer / cottage cheese marinate the paneer with chilli powder, pepper powder and salt. shallow fry and keep aside
Ingredients for the sauce 2 2 onions 6 tomatoes (400 gms ) 10 cashewnuts 6 garlic cloves Stir fry the above in little oil then grind to a paste without adding water.
Ingredients 3 1tbsp dried oregano 1tbsp dried basil 1/4 tsp nutmeg powder chilli powder and pepper powder add according to taste.
METHOD Heat up some oil. Add the ingredient 2 , the sauce. Add chilli powder, pepper powder, nutmeg powder and salt to taste Then add 1 tbsp dried oregano and 1tbsp dried basil. Add 1/2 cup lukewarm water. After a minute add the paneer pieces. Cook for another minute.
FOR THE TOMATO RICE Ingredients 1cup rice washed and soaked for 10 minutes 1tsp dried oregano 1maggie soup cube 2medium size tomatoes , peel of skin and finely chopped 1/2 tsp Chili powder or according to taste 1/4 tsp tomato ketchup. hot water 1tbsp ghee 1bay leaf
Method Add a tbsp ghee. To it add one bay leaf Add now the finely chopped tomatoes and cook till soft Add the soup cube , chilli powder, dried oregano and ketchup. Mix well. Lastly add the rice and stir fry for a minute Pour in Hot water ,1/2 inch above the rice Bring to a boil.Then lower the gas . cover and cook till rice is done.
