Coconut Sweet (Simple & Delicious)

This coconut sweet is a quick and easy homemade treat made with desiccated coconut and cashew nuts. It has a lovely soft texture, delicate flavour from rose or vanilla essence, and can be beautifully coloured for festive occasions. Perfect for celebrations, gifting, or when you want to make a traditional sweet at home with minimal effort.
Ingredients
200 grams of desiccated coconut
250 grams sugar
(220 grams for syrup
30 grams for grinding with cashews)
80 grams cashew nuts
2 tbsp soft butter
1 tsp rose essence or vanilla essence
Food gel colours (pink and green used here)
200 ml water
Preparing the Tray :
Lightly brush the tray with clarified butter (ghee)
Keep aside
Tray size used: 8 inch × 10 inch
Method :
Cashew Powder :
Grind the cashew nuts in batches along with the 30 grams of sugar.
Sift the mixture and keep aside.
Sugar Syrup :
In a pan, add 200 ml water and 220 grams sugar.
Cook on medium flame, stirring continuously, until the syrup becomes thick and sticky to touch.
Mixing :
Reduce the flame to low.
Add the desiccated coconut, cashew nut powder, butter, essence, and food colour.
Cooking the Mixture :
Stir continuously on low flame.
The mixture will quickly come together and start leaving the sides of the pan.
Keep stirring continuously for about 1 minute.
Test: Take a small portion and try rolling it into a ball. If it holds shape, it’s ready.
Setting
Transfer the mixture to the prepared tray.
Spread evenly and press using the back of a spoon coated with butter or ghee.
Use a rolling pin to level the surface smoothly.
Cutting & Setting
After 30 minutes, give cuts ( into desired shapes).
Allow to firm up completely for about 4 hours, then gently remove from the tray.
Notes
Always keep the flame low after adding coconut to avoid overcooking.
I made two batches using the same measurements , one pink the other green.
Store in an airtight container at room temperature.
