Brinjal stir fry

A simple tasty brinjal stir fry with East Indian bottle masala powder . East Indian bottle masala powder can be substituted with malwani masala powder .


Ingredients

500 gms brinjals sliced

1 small bunch spring onions

8 cloves garlic finely chopped

1 onion chopped

1/4 tsp sesame seeds

1/4 tsp poppy seeds

10 cashew nuts

1 tomato sliced

1 big capsicum slice

1/2 cup finely chopped coriander leaves

1 tbsp and 1/2 tsp bottle masala or According to taste


METHOD

Grind cashew nuts, sesame seeds, poppy seeds and onion together with very little amount of water.

Heat few tbsp of oil , add the finely chopped garlic , green chillies and the bulbs of the spring onion which are chopped. Stir fry lightly. Mix in the ground paste and stir fry well. Add the sliced brinjal and stir fry.

Add 1/2 cup of finely chopped greens of the spring onion and sliced tomatoes.

Add 1/2 cup water, salt to taste ,allow to cook .

When almost done add lastly the sliced capsicum and finely chopped coriander leaves.

cook for another 2 mins.

Sprinkle in the remaining greens of the spring onion.
