Raw Mango Curry with Fried Mackerel

Lonvas Curry With Raw Mango And Mackerel stuffed with Temperade Masala


For the Fried Mackerel

Ingredients

4 Mackerels

clean and wash well, make slits on both sides. Add a mix of turmeric and salt to to fish .Keep for 10 mins. Wash it off and pat dry.


Temperade masala

4 or 5 green chili

5 garlic cloves

1inch ginger

1 onion sliced

2 tbsp coriander seeds

1tsp cumin

2 cardamom

1 inch cinnamon

1/2 tsp rice

1/4 tsp Turmeric

little tamarind

1/4 cup coconut fenny

1 tsp vinegar

1/4 cup desiccated coconut


Method

Dry Roast the coriander seeds, cumin seeds, cardamom, cinnamon, rice.

Dry roast desiccated coconut

Add Little oil and stir fry the onions, garlic, green chilies and ginger.

once cooled ,grind all the above with coconut fenny , vinegar and tamarind. If required add Little water to help grind.

Add some oil to the pan and stir fry the masala for 2 mins on low flame.

Allow to cool. Then fill the slits of the fish with this masala and shallow fry.


Raw Mango Lonvas Curry

Ingredients

6 garlic cloves finely chopped

2 green chili

3 tbsp East Indian bottle masala

25 gms coconut powder dissolved in 2 cups hot water

2 onions finely sliced,

few curry leaves

3 cups water

1 tsp jaggery powder

1 big size Raw Mango


Method

Heat up the oil ,add the finely chopped garlic, onions and few curry leaves .Stir fry all till onions are lightly browned. Add 3 cups water ,3 tbsp bottle masala and the green chilli. Allow to come to a boil.

Add the chopped raw mango , Cook till almost done. Add the jaggery powder, salt to taste mix well. Lastly add in the coconut milk.

Cook till done.
