King fish curry, fried King fish, Squid and spring onion stir fry served with Rice.
Ingredients for the
Squid And Spring Onion stir Fry
5 squids
Cleaned washed well and cut into rings
Add a tsp of turmeric powder and leave for 15 mins ,then wash off .
3 green chilies finely chopped
1/4 tsp pepper powder
1/2 tsp turmeric powder
4 garlic cloves finely chopped
1/2 inch ginger finely chopped
1 tomato deseed and sliced
4 spring onions
Finely chop the greens of the spring onion and cut the bulbs into thin round slices
1/2 tsp lime juice
Salt to taste
Method
Add oil to a pan , once hot saute the finely chopped garlic, ginger and green chilies. Add next the chopped onion bulbs and greens of the spring onion , reserving some greens for later.
Add the sliced tomatoes and saute well for 1 minute on medium flame. Add the turmeric powder, pepper powder and squids , stir fry well. Add in salt to taste.
Cook for 3 minutes, till done.
Lastly add the reserved finely chopped greens and lime juice.
For the king fish curry
Used the fish head for the curry
Ingredients for the masala
4 dry kasmiri chilies
2 tsp coriander seeds
1/2 tsp pepper corn
1/2 tsp turmeric powder
3 cloves of garlic
Small piece of tamarind
2 medium size onion sliced
1 tbsp desiccated coconut
Grind all of this to a smooth paste adding just enough water
200 ml coconut milk
3 to 4 green chilies , slit
10 curry leaves
Method
Once oil is hot ,add the ground masala and just enough water. Add salt to taste and curry leaves . Allow to come to a boil. Add the fish head pieces and slit green chilies. Cook till done.
For the fish fry
8 fish slices
Marinate the fish slices
With East Indian bottle, salt to taste, ginger garlic paste and apple cider vinegar.
2 tbsp East Indian bottle masala
Salt to taste
1 tsp ginger garlic paste
2 tsp apple cider vinegar
Mix well, coat the fish slices well with this masala
Coat the marinated fish with semolina and shallow fry
