Atlantic Salmon served with Veggies and a Coconut Gravy (Recipe 2)
Ingredients 1 kg Atlantic Salmon fillets Marinate the Fillets with Grind to paste 1 tbsp ginger garlic paste 6 green chilies 1tsp finely chopped lemon grass ( the bulb of the Lemon grass) Salt to taste 1 tsp pepper corn
Marinate for an hour
Method Shallow fry skin side down first with oil and a tbsp of butter. Fry each side to 1 1/2 mins
For the gravy
Ingredients 200 ml thick coconut milk 1 stock cube 400 ml water 1 tbsp lemon grass bulb Few curry leaves 4 Green chillies slit 1 tsp pepper powder 1 tsp coriander powder 1/ 2 tsp garam masala powder 1 tsp coriander leaves finely chopped 4 cloves garlic finely chopped
Method Add a tbsp of oil, once hot add the finely chopped garlic saute till lightly browned, add the finely chopped lemon grass, stock cube ,400 ml water and allow to come to a boil. Then add the green chillies, add spice powders mentioned in the ingredients and few curry leaves. After a minute add the coconut milk and finely chopped coriander leaves. Cook for a minute. Serve with the salmon.
