Pepper Garlic Chicken Steak Served With A Potato And Bacon Stir Fry And Stuffed Zucchini


This chicken steak has a peppery and slight sweet delicious flavour, pairing these steaks with a simple Potato and bacon stir fry and zucchini stuffed with salsa and topped with cheese

Ingredients For the Chicken Steaks

1 kilo Boneless Chicken breast Take a sharp knife and slit the chicken breast pieces into steak like size

For the Marination

1 tbsp chilli powder 1 tbsp coriander powder 1 tbsp peppper corn ( powder it) 40 gms garlic cloves 100 Red Wine 2 tbsp brown sugar

Mix all these ingredients together. Add this to the chicken steaks .Mix well. Marinate for few hours.

METHOD shallow fry

FOR THE ZUCCHINI Ingredients 500 gms tomatoes finely chopped 3 green chillies finely chopped 1 tbsp Dry pasta spice mix 8 cloves garlic finely chopped 2 onions finely chopped 1/4 cup red wine 1/2 tsp chilli powder Salt to taste

2 Zucchini

Some processed cheese / pizza cheese

Method Chop the zucchini into half. Scoop out some of the pulp ,to make enough room for the stuffing. reserve the pulp Brush the outside of the zucchini with oil and sprinkle in the salt as well brush the inside with oil Lay these in a deep baking dish.

For the stuffing Heat up some olive oil, add the finely chopped garlic and stir fry lightly,then add the finely chopped onions and stir fry till translucent.

Then add the finely chopped tomatoes , the reserved pulp and some salt and cook till soft , occasionally stirring. At this stage add the pasta mix , finely chopped green chillies, chilli powder,and red wine. Cook for 3 mins.

Allow to cool Add this stuffing once cooled to the zucchini and sprinkle in some cheese bake in a preheated oven at 220 celcius degrees. Bake for 45 to 50 mins

FOR THE POTATO AND BACON STIR FRY

Ingredients 300 gms potatoes sliced thinly 3 onions sliced into rings 1/2 tsp pepper powder 1 tsp oregano 50 gms bacon finely chopped 1/4 cup finely chopped coriander leaves

METHOD Add some oilve oil , 5 mashed cloves of garlic stir fry lightly. Add the sliced potatoes and onion rings. Mix in the oregano and allow to cook , keeping covered ,cooking on medium flame , occasionally stir fry. Once the potatoes are half done add the bacon and finely chopped coriander leaves. Cook for 2 mins.
