Pav bhaji / Pao bhaji
A mix of cauliflower florets, green peas and potato mash with spices and homemade garam masala powder.
Ingredients
400 gms cauliflower florets
100 gms green peas
300 gms potatoes
1/2 beetroot
3 onions ( 200 gms) finely chopped
4 tomatoes ( 300 gms) pureed
3 green chillies finely chopped
1 tbsp ginger garlic paste
Method
Boil the potatoes , peel chop and keep aside.
Boil beetroot , pureed and kept aside.
Garam masala powder
1 tsp pepper corn
1 tsp fennel seeds
6 cloves
Half of the mace flower
1 black cardamom
1 inch cinnamon stick
Dry roast lightly and dry grind to a fine powder.
Will be using only 1 tsp of this ground garam masala powder.
Spice powder
1 tsp chilli powder
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp dry mango powder/ amchur
1/2 tsp chaat masala powder
Ingredients
Lime juice
1/2 cup finely chopped coriander leaves
Salt to taste
Butter
2 Finely chopped onions
Method
To a pan add oil and 1 tbsp butter. Saute the onions till lightly brown. Add the finely chopped green chillies and stir fry. Add in the green peas and stir fry on medium flame. Add the cauliflower florets and cook till almost done. Start mashing the cauliflower and peas. Cover and cook on low flame till done , occasionally stirring. Add the boiled potatoes, spice powders , salt to taste and mix well. Add the tomato puree and ginger garlic paste. Mix well , add 1 cup of water , 1 tbsp butter and mash well. Cook on low flame for at least 3 minutes occasionally stirring. Add in the beetroot puree , 1/2 cup water , 1 tbsp butter and mash well again. Cook for 2 mins. covered on low flame and occasionally stirring. Add 1tsp garam masala powder and finely chopped coriander leaves. Cook for another 3 to 5 mins. on low flame occasionally stirring.
Serve with finely chopped onions , lime and pav.
