Here is a recipe of Rawa ladoos loaded with dry fruits and shaped into modaks using a modak mould.
Thanks Valerie , for giving me this tip to use a modak mould to form these ladoos ,a time saver.
Ingredients
300 gms fine semolina
40 gms almonds
25 gms unsalted pistachio
100 gm (deseed ) dates , finely chopped
50 gms walnuts
5 tbsp hot melted ghee
1and 1/2 tsp cardamom powder
1/3 cup water
1 cup sugar
Method
Dry roast the almonds , pistachios, walnuts
Allow to cool and powder it in a dry grinder.
Dry roast the fine semolina on low flame ,when almost done add a tbsp of ghee reserving 4 tbsp for later .Stir fry the semolina in this 1 tbsp ghee on low flame.
Remove , once lukewarm dry grind with the finely chopped dates.
Mix the ground dry fruit powder mix and ground semolina and dates mix together.
To a vessel add 1 cup sugar and 1/3 cup water
keep stirring till it comes to one thread consistency.( touch your two fingers to the sugar syrup, then release ,once releasing it will show one thread , its done)
Add the semolina and dry fruit mixture to this syrup. Mix well on low flame.
Remove from heat .
Add the cardamom powder and mix
Once warm and ready to handle add 4 tbsp hot melted ghee to this mixture and mix well.
using a aluminium modak mould , stuff this mixture and press well , release , and modaks are done .
for ladoos just form into balls ,if finding a bit tough add in a tbsp of hot ghee till you are able to form.
