Chicken Stew {Recipe 2}

Chicken Stew with carrot , sweet corn and dried herbs . Basic spices of just green chillies added to this stew along with coconut milk.




500 gms chicken pieces

1 big corn chopped

2 big carrots


1 tsp each of dried basil,rosemary and oregano and powder it


4 to 5 green chillies sliced

Spring onion (only the onion)

1 tbsp corriander powder

1/2tsp cumin powder

1/2 tsp pepper powder

1 stock cube



METHOD

Add a tbsp of butter and some olive oil or any vegetable oil.

Stir fry the whole onions slightly. Add the chicken pieces and stir fry . Mix in the corn and carrots. And the ground rosemary,basil and oregano mix and sliced chillies .


Add spices a tbsp corriander powder,1/2tsp cumin powder and pepper powder


Add 1 chicken stock cube dissolved in 1 glass of water . Add more water if required


Let it come to a boil. Then add a 1/2cup of thin coconut milk. When the chicken is done add 1/2cup of thick coconut milk. Add salt if required.
