A quick chickent stir fry.
450gms chicken breast
Cut into cubes. Marinade the pieces in a bit of ginger and garlic paste ,chilli powder, coriander powder,cumin powder and pepper powder. Salt to taste and a tsp of rice flour. Mix well
Shallow fry the pieces till done.
4 medium size onions
2 tomatoes sliced
2 to 3 green chilli finely chopped
2 tsp finely chopped coriander leaves
1 tsp coriander powder
1/2 tsp cumin powder
1/2 or 1/4 tsp pepper powder
Salt to taste
1tsp apple cider vinegar
3 small capsicum or 2 medium size capsicum roughly chopped
Stir fry the onions till translucent , in the same pan where the chicken was fried .
Add the finely chopped green chillies and sliced tomatoes. Mix well.
Add salt to taste and the powdered spices.
Add 2 tbsp of water.
Allow the tomatoes to cook till slightly soft
Then add the fried chicken pieces. Mix well
Lastly add the roughly chopped capsicum and the finely chopped coriander leaves. Along with the apple cider vinegar.
Cook for another 5 to 10 mins on medium flame.
