A yummy meat curry prepared with basic Indian red masala and the East Indian Tempero Di Cuddi powder.
Here I have used beef steak pieces , which I have cut into small cube pieces . This helps the meat to cook well and quickly.
Meat Curry
Ingredients 1 1 kilo 300 gms beef steaks Add salt, vinegar and wheat flour to the steaks, keep for an hour. Wash off well ,pat dry. Using a kitchen scissor cut the steaks into cube piece .
Method Marinate the beef pieces with 1 tsp chilli powder , 1 tsp ginger garlic paste and 1/2 tsp salt. Keep for few 1 hr
Ingredients 2 For the Masala 8 kashmiri chilllies 1 tbsp coriander seeds 1 tsp cumin seeds 1/2 tsp fennel seeds 1/2 tsp pepper corn 1/4 tsp poppy seeds 1/4 tsp sesame seeds 1/4 tsp turmeric powder 1 onion sliced
Roast all the above mentioned spices except the turmeric powder and sliced onion.
Add a tbsp ghee and saute the sliced onion till lightly brown
Now grind the above mentioned roasted spices , fried onions and turmeric powder with just enough water to make a paste.
Ingredients 3 green chillies finely chopped 4 onions finely chopped 4 tomatoes finely chopped 1/2 tsp tempero Di Cuddi powder Or garam masala powder
1 and 1/2 cup water 1/4 cup finely chopped coriander leaves 2 tsp Apple cider vinegar or white vinegar.
Method Using a pressure cooker add 4 tbsp ghee/ Clarified butter . Once hot saute onions till lightly brown. Add the finely chopped green chillies and finely chopped tomatoes. Saute till tomatoes turn soft. Next mix in the ground masala and 1/2 cup water. Cook this masala for a minute. Add the beef pieces, mix well add 1 cup water. Pressure cook on high first whistle then low for 10 mins.
Once the pressure is released add 1/2 tsp Tempero Di Cuddi powder, finely chopped coriander leaves and 2 tsp vinegar.
A powdered spice mix used for flavouring Meat Dishes. Made this Tempero spice powder my way , with a slight change.
Garam masala 2 (East Indian Tempero ( A seasoning to flavour Dishes) Di Cuddi) Ingredients 100 gms Cinnamon 40 gms cloves 40 gms cardamom 40 gms peppercorns 20 gms Star anise 10 gms Javitri / mace flower 10 gms bay leaf 5 gms all spice 5 gms Triphal / szechuan pepper 10 gms saunf / fennel seeds 10 gms methi seeds / fenugreek seeds 10 gms Shah Jeera / black cumin seeds
Dry ingredients in the sun, lightly roast, Dry grind the spiced , sift well, and bottle used for flavouring Chicken, mutton, beef or Pork.
